PURPOSE OF POSITION job role
To t rain and supervise the work of the kitchen personnel in their sections. Maintain high standards of food preparation and service in the appointed kitchens.
Train and supervise kitchen staff in their jobs and maintain a high standard of food preparation and supply in designated kitchens.
 
KEY ROLES & RESPONSIBILITIES Key Roles and Responsibilities
  • Assist the Chef de cuisine and Sous Chef to ensure sufficient and high quality food is prepared and displayed as mandated by the Executive Chef in order to acquire maximum customer satisfaction and profitability .
  • Assist chef and head chef to ensure that adequate food and high-quality food are ready, display, executive head chef order to maximize customer satisfaction and profitability.
  • Monitor the production of food items to ensure they are in compliance with the prescribed recipes and specifications.
  • Monitor food production projects to ensure that they have the product in accordance with the original formula and specifications.
  • Adhere to all the standards of food presentation, production, and portioning controls.
  • Follow all the food wobble plate, production, weight control standards.
  • Be aware of and adhere to company policies and statutory requirements with regards to health and safety, sanitation, and fire procedures.
  • Pay attention to and comply with company policy and regulatory requirements regarding health and safety, hygiene, fire protection procedures.
  • Ensure safe and proper use of equipment at all times and to instruct this to all culinary colleagues.
  • Guide all kitchen colleagues at all times safe and rational use of equipment.
  • Ensure all fridges and food storage areas are impeccably maintained during service and that all products are properly rotated, dated, and stored at end of your shift.
  • Make sure that all refrigerators have the same food storage area and pot life, all products are properly recycled, dated, and stored for shelf life.
  • Coordinate Restaurant / Banquet / food production, and all specific duties to junior staff .

EXPERIENCE work experience
  • Minimum 2 - 3 years Hotel experience with at least 1 year in a 5 star luxury operation environment .
  • At least 2-3 years hotel work experience, at least one year five-star luxury hotel work experience.
