- Supervise all banquet staff, facilities, sales and costs to ensure maximum departmental profit
- Coordinate and supervise banquet services, catering product development, display and service to ensure the highest quality at all times
- Establish and maintain effective employee relationships
- Supervise and coordinate pricing, develop banquet menus, wine list
- Coordinate with the finance manager to determine the maximum and minimum inventory of meals;
- Weekly catering meeting
- Keep the latest standard recipes for all meals
- The Food and Beverage Department implements daily, weekly and monthly lists; ensuring correct follow-up, maximizing quality and efficiency
- Learn about trends, operations and equipment in hotel and restaurant catering production and services through exhibition materials and actual visits
- Contact external individuals at the hotel, including but not limited to guests, suppliers, government officials, competing hotels, and other members of the local community
- Supervises the functioning of all Food and Beverage employees, facilities and benefits, to ensure maximum departmental profit is achieved
- Coordinates and supervises the preparation, service and service of food products to ensure the highest quality at all times
- Establishes and maintains effective employee relations
- Supervises an coordinates pricing and preparation of menus, beverage and wine lists by taking into consideration such factors as:
* Coordinates with the Finance Manager to determine the minimum and maximum Food and
* Beverage par stocks. Conducts weekly Food and Beverage meetings
* Keeps and up-to-date standard recipe file for all
* Food and Beverage items:
* Implements a daily, weekly and monthly checklist for all Food and Beverage departments.
* Ensures proper follow-up to attain maximum quality and efficiency
* Keeps aware of trends, systems, and equipment in Food and Beverage preparation and service in the hotel and restaurant field through trade literature and actual visits
* Interacts with individuals outside the hotel including, but not limited to, clients, suppliers, government officials, competitors and other members of the local community
